Gonk-stores Paradise is one of the many available optional side missions. It can be found and collected whilst on the planet Tatooine.
This mission will involve escort Gonker to its destination

LOCATION: Tatooine – Landing Pad

Another simple side mission, that should feel familiar at this point.
Simply head to the Tatooine Landing Pad and speak with Gonker in order to begin this escorting mission.
We will now be tasked with escorting Gonker to its destination, during which you will be attacked by Pirates. Eliminate the incoming threat and continue to escort Gonker.
Once Gonker has successfully reached its destination it will now allow you to enter its store (Gonk-Stores Paradise)
Inside the store speak with Gonk-Stores Paradise Trading Inc to complete the mission.
We will get a Kyber Brick for our troubles
