This hidden / secret cutscene can be unlocked during Chapter 14 – In Search of Hope. This is actually the second secret / hidden scene involving both Cloud and Aerith.
Whilst the first hidden scene required you to complete all side quests and then witness a scene where Aerith will be talking to her flowers, you can see that scene here
This new and last hidden scene between the characters will require a bit more work in order to unlock and it can also be missable too.
The scene will show Aerith in one of Cloud’s dreams and she will mention such things as her life amongst the Shinra when she was young.
In order to unlock the scene you will need to answer certain dialogue options with specific replies, a guide on how to do so can be found below..

CHAPTER 3 – Home Sweet Slum
SCENE – Tifa Drink
DIALOGUE OPTION: Not in the Mood
CHAPTER 9 – Town That Never Sleeps
SCENE – Hotel Barker
DIALOGUE OPTION: No.. Thanks

SCENE – Aerith’s Outfit
DIALOGUE OPTION: It’s alright
CHAPTER 10 – Rough Waters
SCENE – Wake Up
DIALOGUE OPTION: N/A
This isn’t a dialogue option choice, however in order to increase your chances of unlocking this scene you will need to ignore Tifa and choose to speak to Aerith instead.
If you do these steps correctly then you will be able to get this choice of scene during Chapter 14 – In Search of Hope.
