In (MHWI) Monster Hunter Wilds the quest that enables you to actually start fishing in the game is Fishing: Life in Microcosm. It leads to a multitude of fishing side quests that see you talking with Kanya and catching whatever fish she expects you to catch. It also acts as a tutorial in how to fish.

Starting Fishing: Life in Microcosm
Kanya can be found in the Scarlet Forest Base Camp. Which can be unlocked during the main story. She is a fisher who is eager to pass on her knowledge of fishing. To start this quest, you must talk with Kanya. She can be found near the southern edge of the camp. It’s not hard to miss her. She’s standing on a huge rock in front of a pond!
Unlike some of the later quests she gives you, there is not any specific fish she needs you to catch. She literally just needs you to catch a fish out of whatever body of water you choose. Ideally, you’ll fish out of the pond she’s standing in front of, but hey you do you.
How To Complete the Quest
Now you have to start the quest. Select your fishing rod and toss your lure into the water. Hopefully it will not be too long of a wait before the fish bites. Lure it in and then return to Kanya.
After speaking to Kanya she will give you the following rewards: 5 Sushifish Scales and 5 Honey. From there, you’ll be able to complete a bunch of other fishing related quests for Kanya.
The related fishing side-quests involve you catching a specific sort of fish so sadly they aren’t as easy as the first one Kanya gives you. Next up is: Monster Hunter Wilds – Seeking the Goldenfish
